Perch thrive spectacularly in our pure mountain spring water. They are probably the most popular freshwater fish in all of Switzerland. Perch meat is firm, very pale in colour and low in fat. The best way to bring out its flavour is to braise or steam it, or dust it with a little flour and then fry it in butter. A popular variant is “Chnusperli”, beer-battered perch fritters.
