Why do we exist?

It all began with water—warm, clear, and teeming with life. But how can we return it to its source after use in a way that leaves the surrounding natural environment untouched? The answer was not to do without, but to have a vision: from the desire to protect the waters and the creatures that live there, a sustainable home for sturgeon was created. And from this sense of responsibility Oona Caviar was born Oona Caviar pure, respectful, and as unique as its origins.

Sustainable. This has been one of our most important values from the very beginning. That is why Oona Caviar is now one of the most sustainable sturgeon farms in Europe - achieved through pioneering work and with the help of innovative technology. 50,000 sturgeons swim continuously and for years in naturally warm mountain water, are fed specifically with specially formulated, environmentally friendly fish feed and carefully reared.

Through resource-efficient recycling systems, we protect our waterways and the environment, conserve natural resources, and ensure the well-being of our sturgeon. The result is a sustainable, premium Swiss caviar that not only promises the ultimate in enjoyment but also demonstrates a sense of responsibility—for today and for future generations.

Short transportation routes

Oona Caviar harvested today and delivered tomorrow—as fresh as if it came straight from the water. Short transport routes protect the environment, reduce CO₂ emissions, and preserve the pure flavor, enhanced only with high-quality salt.

Sturgeon from Swiss recirculating aquaculture systems is featured in the WWF’s Fish Guide as “green” —a distinction for sustainable farming, stable stocks, and environmentally friendly production. This means our sturgeon is also expressly recommended.

Zero Waste

The fresh Oona Caviar is the essence and the centerpiece - but it is by no means everything. We process the whole fish out of respect for nature.
The skin of our sturgeon is turned into fine leather, its meat is offered as fillets in a variety of flavors and smoked versions. What is left over is converted into biogas to generate clean electricity. This closes the circle - sustainably, honestly and respectfully.

The food was developed by us - perfectly adapted to the respective sturgeon species and their natural needs.

100% renewable energy

Our production facility in Frutigen powered entirely by renewable energy. Hydropower, solar energy, biogas, and the use of waste heat from the Lötschberg Tunnel work together to form an efficient, regionally based energy system. This results in a production process that conserves resources and reduces emissions—clean for our fish and environmentally responsible.

Our water comes directly from the mountain spring in the Lötschberg - crystal clear, rich in minerals and ideal for rearing our sturgeon.

In state-of-the-art circulation systems, the water always remains clean in circulation - conserving resources and independent of natural waters.

Animal welfare in focus

CITES stands for “Convention on International Trade in Endangered Species of Wild Fauna and Flora”; in German, this translates to “Convention on International Trade in Endangered Species of Wild Fauna and Flora.” CITES is the international convention on species protection; since 1975, it has regulated trade in endangered animal and plant species, including sturgeon and, consequently, caviar. Its goal is to protect species and ensure that trade and consumption do not threaten their survival.

That is why sustainability is important

As the first and only Swiss sturgeon farm, Oona Caviar is a Swiss pioneer in the protection of endangered wild sturgeons: production in sustainable aquaculture protects wild stocks.

All legal caviar trade is subject to strict CITES controls. Documentation is required, and every jar must be traceable back to the origin of the fish. Caviar may only come from approved, registered farms. Each package must bear a CITES number that clearly identifies the origin and year of harvest. We are proud to fully comply with these standards.
